Pollen Bakery, based on Sheffield Street, Manchester is a tenant of Network Rail. They rent one of the arches underneath Manchester Piccadilly Train Station. Working for Network Rail I was asked to spend an inspirational hour at this wonderful artisan bakery this morning gathering images for the company.
Pollen Bakery is a Sourdough & Viennoiserie bakery run by Hannah Calvert & Chris Kelly. Pollen was born from a love of great food. Chris and Kelly started baking sourdough in their home kitchen in 2011 and the rest is history. 5 years later, after much practice, reading and experience they decided to leave their banking jobs and embark on bringing great real bread to central Manchester. Pollen’s aim is simple, to produce the best quality bread possible and make their bread better and learn a lot along the way. All their bread is sourdough, made with naturally occurring yeast from their sourdough culture. They use only three ingredients in the base of the dough’s, flour, water and salt. Great bread doesn’t need anything else! For all the time I was there they were queuing down the road to buy the bakery’s wonderful creations.
